  • 70g wholemeal flour
  • 2 eggs
  • 125ml semi-skimmed milk
  • 90g low-fat yogurt
  • 40g blueberries

Method
  1. Whisk wholemeal flour, eggs and semi-skimmed milk into a smooth batter and leave it to stand for 2 minutes.
  2. Lightly grease a non-stick pan, then cook small pancakes for 1-2 minutes per side.
  3. Serve with low-fat yogurt and blueberries.

Lentil and Roasted Vegetable Soup

Ingredients
  • 90g green lentils
  • 1 courgette
  • 1 red pepper
  • ¾ onion
  • 425ml vegetable stock
  • ¾ tsp cumin

Method
  1. Peel and chop onion, courgette and red pepper into even pieces.
  2. Heat the oven to 200°C (180°C fan) and roast courgette and red pepper for 25-30 minutes, until tender and caramelised at the edges. Meanwhile, soften onion in a large non-stick pan over medium heat, adding a splash of water if the pan starts to stick.
  3. Stir in vegetable stock and cumin, then add green lentils and simmer gently until tender and thickened.
  4. Stir the roasted courgette and red pepper into the soup.
  5. Taste, season and portion for serving.

  • 90g brown rice (dry weight)
  • 175g mushrooms
  • 90g frozen peas
  • ¾ onion
  • 525ml vegetable stock
  • 15g parmesan
  • 2 garlic cloves

Method
  1. Soften the onion and garlic in a wide pan over medium heat for 3-4 minutes, then add the sliced mushrooms and cook until golden.
  2. Stir in the brown rice and cook for 1 minute so the grains are coated.
  3. Add the hot vegetable stock a ladleful at a time, stirring often and letting each addition be absorbed before adding the next. Brown rice takes about 35-40 minutes to become tender and creamy.
  4. Stir in the frozen peas for the last 3-4 minutes, then take the pan off the heat, stir through the parmesan and season to taste.
