- Toast or warm wholemeal bread.
- Slice cherry tomatoes.
- Layer cottage cheese, cherry tomatoes and black pepper, to taste evenly.
Lentil and Roasted Vegetable Soup

- 1 courgette
- 1 red pepper
- 1 onion
- 475ml vegetable stock
- 1 tsp cumin

- Peel and chop onion, courgette and red pepper into even pieces.

- Stir in vegetable stock and cumin, then add green lentils and simmer gently until tender and thickened.
- Taste, season and portion for serving.

- ½ small head of broccoli (about 175g)

- Heat the oven to 200°C (180°C fan).
- Cut the sweet potato into wedges, toss with most of the olive oil and roast for 30-35 minutes, turning halfway.

- Meanwhile, steam or boil the broccoli for 4-5 minutes, drizzle with the remaining olive oil and serve with lemon wedges.
