- 7 egg whites
- ¾ pepper
- ½ onion
- olive oil spray, as needed
- 1¼ tsp mixed herbs

Method
- Slice or chop pepper and onion, then cook them in a non-stick pan over medium heat until softened.
- Beat the eggs in a bowl with mixed herbs and season lightly, then pour into the pan and cook over medium heat until just set, folding it over to serve.
- Season to taste and serve.
Cannellini Bean and Tomato Soup
Made with cannellini beans tinned, tinned tomatoes, onion.

- 1 standard tin of cannellini beans, drained
- 1¼ standard tins of tomatoes
- 1¼ onions
- 4 garlic cloves
- 225ml vegetable stock
- basil, to taste

Method
- Peel and chop onions and garlic into even pieces. Drain and rinse cannellini beans.
- Heat a large pan over medium heat and soften onions and garlic for 5-7 minutes.
- Stir in vegetable stock and basil, to taste, then add cannellini beans and tomatoes and simmer gently until tender and thickened.
- Taste, season and portion for serving.
Tofu Pad Thai
Made with firm tofu, rice noodles, beansprouts.

- 225g firm tofu
- 90g rice noodles (dry weight)
- 125g beansprouts
- 4 spring onions
- 2¼ tbsp tamari
- lime juice, to taste
- 25g peanuts

Method
- Cook the noodles according to their packet instructions, then drain if needed.
- Meanwhile, cook the tofu in a non-stick pan over medium heat, stirring, until browned and hot through. Add beansprouts and spring onions and cook until tender.
- Fold the cooked noodles through the pan, stir in tamari and lime juice, to taste, and heat through before serving with peanuts scattered over.
