  • 2 bananas
  • 2 Medjool dates
  • 80ml oat milk
  • ¾ tbsp hemp seeds
  • 15g low-sugar granola

Method
  1. Put bananas, Medjool dates and oat milk in a blender, or in a jug if you are using a stick blender.
  2. Blend until completely smooth, adding a small splash of water or milk only if needed.
  3. Pour into a bowl and top with hemp seeds and low-sugar granola, then serve cold.

  • ¾ of a standard tin of chickpeas, drained
  • 3 generous handfuls baby spinach (about 80g)
  • 150g tomatoes
  • 60g brown rice (dry weight)
  • 1½ tsp curry powder
Method
  1. Drain and rinse chickpeas.
  2. Heat a large pan over medium heat.
  3. Stir in curry powder, then add chickpeas, baby spinach and tomatoes and simmer gently until tender and thickened.
  4. Meanwhile, cook the rice according to its packet instructions, then drain and serve alongside.

  • 150g firm tofu
  • 70g brown rice (dry weight)
  • ½ small head of broccoli (about 150g)

  • 2 spring onions

Method
  1. Cook the rice according to its packet instructions, then drain if needed.
  2. Meanwhile, cook the tofu in a non-stick pan over medium heat, stirring, until browned and hot through. Add a small head of broccoli and spring onions and cook until tender.
  3. Fold the cooked rice through the pan, stir in teriyaki sauce, and heat through before serving with sesame seeds scattered over.
