  1. Whisk wholemeal flour, eggs and semi-skimmed milk into a smooth batter and leave it to stand for 2 minutes.

  1. Peel and chop onion and garlic into even pieces. Drain and rinse cannellini beans.
  2. Heat a large non-stick pan over medium heat and soften onion and garlic for 5-7 minutes, adding a splash of water if the pan starts to stick.
  3. Stir in vegetable stock and basil, to taste, then add cannellini beans and tomatoes and simmer gently until tender and thickened.
  4. Taste, season and portion for serving.

  • 200g mushrooms

Method
  1. Soften the onion and garlic in a wide pan over medium heat for 3-4 minutes, then add the sliced mushrooms and cook until golden.
  2. Stir in the brown rice and cook for 1 minute so the grains are coated.
  3. Add the hot vegetable stock a ladleful at a time, stirring often and letting each addition be absorbed before adding the next. Brown rice takes about 35-40 minutes to become tender and creamy.
  4. Stir in the frozen peas for the last 3-4 minutes, then take the pan off the heat, stir through the parmesan and season to taste.
