Ingredients
  • 20g chia seeds
  • 125ml coconut milk
  • 70g mango chunks
  • vanilla extract, to taste
Method
  1. Stir chia seeds and coconut milk together in a lidded jar or container.
  2. Stir well, cover and chill for at least 4 hours or overnight.
  3. Stir again before eating, then add mango chunks and vanilla extract, to taste. Loosen with a splash of coconut milk if needed.

Miso Tofu and Edamame Bowl

Made with silken tofu, edamame beans, brown rice.

Ingredients
  • 100g silken tofu
  • 70g edamame beans
  • 50g brown rice (dry weight)
  • ¾ tbsp miso paste
  • ¾ tbsp soy sauce
  • ¾ tsp sesame seeds

Method
  1. Cook the brown rice according to its packet instructions.
  2. Cook the edamame beans in boiling water for 3-4 minutes, then drain.
  3. Mix the miso paste and soy sauce with a tablespoon of hot water to make a dressing.
  4. Cut the silken tofu gently into cubes; it is too delicate to fry. Arrange the rice, edamame and tofu in a bowl, spoon over the dressing and scatter with sesame seeds.

  • 1 standard tin of chickpeas, drained
  • 3 generous handfuls baby spinach (about 100g)
  • 125ml light coconut milk
  • 125g tomatoes
  • ¾ onion
  • 1 tbsp plus 1 tsp curry paste
  • 50g brown rice (dry weight)

Method
  1. Peel and chop onion into even pieces. Drain and rinse chickpeas.
  2. Heat a large pan over medium heat and soften onion for 5-7 minutes.
  3. Stir in light coconut milk and curry paste, then add chickpeas, baby spinach and tomatoes and simmer gently until tender and thickened.
  4. Meanwhile, cook the rice according to its packet instructions, then drain and serve alongside.
