  • 5 egg whites
  • ½ pepper
  • ½ onion
  • olive oil spray, as needed
  • ¾ tsp mixed herbs

Method
  1. Slice or chop pepper and onion, then cook them in a non-stick pan over medium heat until softened.
  2. Beat the eggs in a bowl with mixed herbs and season lightly, then pour into the pan and cook over medium heat until just set, folding it over to serve.

  2. Warm the baked falafel through in a non-stick pan or oven until piping hot.

  • 1¼ standard tins of chickpeas, drained
  • 4 generous handfuls baby spinach (about 125g)
  • 175ml light coconut milk
  • 175g tomatoes
  • ¾ onion
  • 1 tbsp plus 2 tsp curry paste
  • 70g brown rice (dry weight)

Method
  1. Peel and chop onion into even pieces. Drain and rinse chickpeas.
  2. Heat a large non-stick pan over medium heat and soften onion for 5-7 minutes, adding a splash of water if the pan starts to stick.
  3. Stir in light coconut milk and curry paste, then add chickpeas, baby spinach and tomatoes and simmer gently until tender and thickened.
  4. Meanwhile, cook the rice according to its packet instructions, then drain and serve alongside.
