  • 3 eggs
  • 2 slices of rye bread
  • ½ tsp turmeric
  • black pepper, to taste
  • 4g butter
  • 1 generous handful baby spinach (about 25g)

Method
  1. Slice or chop baby spinach, then cook them in butter in a non-stick pan over medium heat until softened.
  2. Beat the eggs in a bowl with turmeric, then add them to the pan and cook over medium heat, stirring gently until softly set.
  3. Toast rye bread, then serve with the eggs and black pepper, to taste.

Method
  1. Peel and chop the carrot, celery and onion.
  2. Put them in a large pan with the chicken stock, bring to the boil, then add the chicken breast and simmer gently for 12-15 minutes, until cooked through.
  3. Lift out the chicken and shred it. Add the orzo pasta to the pan and simmer for 8-10 minutes, until tender.
  4. Return the chicken to the pan, season to taste and scatter over the parsley before serving.
