  • 75g smoked mackerel fillet
  • 2 eggs
  • 2 slices of wholemeal bread
  • 4g butter
  • ¾ tsp lemon juice

Method
  1. Crack the eggs into a bowl, season lightly and whisk with a fork. Heat butter in a non-stick pan, then cook the eggs over medium heat, stirring gently until softly set.

Method
  1. Peel and chop the carrot, celery and onion.
  2. Put them in a large pan with the chicken stock, bring to the boil, then add the chicken breast and simmer gently for 12-15 minutes, until cooked through.
  3. Lift out the chicken and shred it. Add the orzo pasta to the pan and simmer for 8-10 minutes, until tender.
  4. Return the chicken to the pan, season to taste and scatter over the parsley before serving.

  • 175g lean turkey mince
  • 4 mixed peppers
  • 70g cooked brown rice
  • 175g tomatoes
  • ¾ onion
  • 2 garlic cloves
Method
  1. Heat the oven to 200°C (180°C fan). Halve the mixed peppers lengthways, remove the seeds and core, and arrange cut-side up in an ovenproof dish.
  2. Cook the lean turkey mince with onion and garlic in a non-stick pan over medium heat, breaking it up, until browned.
  3. Stir in cooked brown rice and tomatoes and season to taste.
  4. Spoon the filling into the pepper halves and bake for 25-30 minutes, until the peppers are tender.
