- 30g chia seeds
- 200ml coconut milk
- 100g mango chunks
- vanilla extract, to taste
Method
- Stir chia seeds and coconut milk together in a lidded jar or container.
- Stir well, cover and chill for at least 4 hours or overnight.
- Stir again before eating, then add mango chunks and vanilla extract, to taste. Loosen with a splash of coconut milk if needed.
Hummus and Roasted Vegetable Pitta
Made with hummus, wholemeal pitta, courgette.

- 1 wholemeal pitta
- 1 courgette, roasted
- 1 red pepper, roasted
- 1 generous handful spinach (about 30g)

- Toast or warm wholemeal pitta.
- Slice roasted courgette and roasted red pepper.

- 1 medium sweet potato

Method
- Heat the oven to 200°C (180°C fan).
- Cut the sweet potato into chunks and the apple into wedges, toss with the olive oil, crushed garlic and rosemary, and roast for 25-30 minutes.
- Meanwhile, brown the pork tenderloin all over in a hot non-stick pan, then add it to the tray for the final 15-20 minutes, until cooked through with no pink juices.
- Rest the pork for 5 minutes, then slice and serve with the sweet potato and apple.
Roasted Spiced Chickpeas
Made with tinned chickpeas, smoked paprika, cumin.

- ¾ of a standard tin of chickpeas, drained
- 1 tsp smoked paprika
- ½ tsp cumin
- 1 tsp olive oil
Method
- Heat the oven to 200°C (180°C fan).
- Drain and rinse the chickpeas, then pat them dry with kitchen paper.
- Toss with the olive oil, smoked paprika and cumin, spread on a baking tray in a single layer and roast for 25-30 minutes, shaking halfway, until crisp.
- Leave to cool on the tray; they crisp up further as they cool.
