- 70g rolled oats
- 225ml oat milk
- 1 banana
- ¾ tbsp peanut butter

Method
- Put rolled oats and oat milk in a small saucepan and stir to combine.
- Simmer gently for 4-6 minutes, stirring, until the oats are soft and creamy.

Miso Tofu and Edamame Bowl

- 125g silken tofu
- 80g edamame beans
- 60g brown rice (dry weight)

Method
- Cook the brown rice according to its packet instructions.
- Cook the edamame beans in boiling water for 3-4 minutes, then drain.
- Mix the miso paste and soy sauce with a tablespoon of hot water to make a dressing.
- Cut the silken tofu gently into cubes; it is too delicate to fry. Arrange the rice, edamame and tofu in a bowl, spoon over the dressing and scatter with sesame seeds.
Red Lentil Dahl with Brown Rice

- ¾ onion
- 2 garlic cloves
- ¾ tsp ginger
- 1½ tsp garam masala
- 60g brown rice (dry weight)
Method
- Cook the rice according to its packet instructions, then drain if needed.
- Meanwhile, simmer red lentils, tomatoes, onion, garlic, ginger and garam masala together in a pan with enough water to cover, until tender.
- Fold the cooked rice through the pan, season to taste and serve hot.
