- 50g quinoa
- 175ml light coconut milk
- 70g mango chunks
- ½ tsp cinnamon
- 1 tsp maple syrup
Method
- Rinse the quinoa in a sieve, then put it in a small saucepan with the light coconut milk and cinnamon.
- Bring to a gentle simmer and cook for 15-20 minutes, stirring often, until the quinoa is tender and creamy. Add a splash of water if it gets too thick.
- Spoon into a bowl, top with the mango chunks and drizzle over the maple syrup.
Lentil and Roasted Vegetable Soup
Made with green lentils, courgette, red pepper.

- 90g green lentils
- 1 courgette
- 1 red pepper
- 1 onion
- 450ml vegetable stock
- 1 tsp cumin

Method
- Peel and chop onion, courgette and red pepper into even pieces.
- Heat the oven to 200°C (180°C fan) and roast courgette and red pepper for 25-30 minutes, until tender and caramelised at the edges. Meanwhile soften onion in a large pan over medium heat.
- Stir in vegetable stock and cumin, then add green lentils and simmer gently until tender and thickened.
- Taste, season and portion for serving.
Spinach and Ricotta Wholemeal Pasta

- 80g wholemeal pasta (dry weight)
- 4 generous handfuls baby spinach (about 125g)
- 2 garlic cloves
- 15g parmesan
- 1 tbsp olive oil

Method
- Cook the pasta according to its packet instructions, keeping a mug of the cooking water before you drain it.

- Stir in the ricotta with a splash of the pasta water to make a sauce, then toss through the drained pasta.
- Serve with the parmesan grated over.
