- 3 eggs
- 2 slices of rye bread
- ½ tsp turmeric
- black pepper, to taste
- 4g butter
- 1 generous handful baby spinach (about 30g)

Method
- Slice or chop baby spinach, then cook them in butter in a non-stick pan over medium heat until softened.
- Beat the eggs in a bowl with turmeric, then add them to the pan and cook over medium heat, stirring gently until softly set.
- Toast rye bread, then serve with the eggs and black pepper, to taste.
Green Lentil and Roasted Sweet Potato Bowl
Made with green lentils, sweet potato, baby spinach.

- 90g green lentils (dry weight)
- 1 medium sweet potato
- 2 generous handfuls baby spinach (about 50g)
- 1 tbsp plus 1 tsp tahini
- lemon juice, to taste

Method
- Cut the medium sweet potato into even chunks and roast at 200°C (180°C fan) until tender and browned, then cool slightly.
- Simmer the green lentils (dry weight) in a pan with plenty of water for 15-20 minutes, until tender, then drain any excess liquid.
- Rinse and dry baby spinach.
- Arrange the cooked green lentils, medium sweet potato and baby spinach in a bowl and finish with tahini, lemon juice, to taste and cumin.
Cod and Chickpea Stew

- 175g cod fillet
- ¾ of a standard tin of chickpeas, drained
- 1 standard tin of tomatoes
- 1 onion
- 3 garlic cloves
- 1 tsp paprika

Method
- Peel and chop the onion and garlic. Drain and rinse the chickpeas.
- Soften the onion and garlic in a large pan over medium heat for 5 minutes, then stir in the paprika.
- Add the tomatoes and chickpeas with a splash of water and simmer for 10 minutes, until thickened.
- Nestle the cod fillet into the sauce, cover and simmer gently for 8-10 minutes, until it flakes easily. Break it into chunks, season to taste and scatter over the parsley.
Turkey Breast and Cream Cheese Roll-Up
