- 50g light cream cheese

- 5 cucumber slices
- 1 tsp lemon juice

Method
- Toast or warm wholemeal bagel.
- Slice cucumber.
- Layer light cream cheese, smoked salmon, cucumber and lemon juice evenly and season to taste.

Method
- Peel and chop the carrot, celery and onion.

- Lift out the chicken and shred it. Add the orzo pasta to the pan and simmer for 8-10 minutes, until tender.
- Return the chicken to the pan, season to taste and scatter over the parsley before serving.
