  • 225ml plain kefir
  • 125g frozen mixed berries
  • 1¼ tbsp chia seeds
  • 1¼ tsp honey

Method
  1. Stir plain kefir and chia seeds together in a lidded jar or container.
  2. Stir well, cover and chill for at least 4 hours or overnight.
  3. Stir again before eating, then add frozen mixed berries and honey. Loosen with a splash of plain kefir if needed.

  1. Drain and rinse chickpeas.
  2. Heat a large pan over medium heat.
  3. Stir in curry powder, then add chickpeas, baby spinach and tomatoes and simmer gently until tender and thickened.
  4. Meanwhile, cook the rice according to its packet instructions, then drain and serve alongside.

  • 1 standard tin of green lentils, drained
  • 225g mushrooms
  • 1¼ onions
  • 2 carrot
  • 275g sweet potato mash
  • 225ml vegetable stock

Method
  1. Heat the oven to 200°C (180°C fan).
  2. Cook green lentils, mushrooms, onions and carrot in a pan over medium heat until softened and hot through.
  3. Add vegetable stock and simmer for 8-10 minutes, until the filling has thickened and is no longer loose.
  4. Season the filling, then tip it into an ovenproof dish and level the surface.
  5. Spread the sweet potato mash evenly over the top, right to the edges so the filling is sealed in, and rough up the surface with a fork.
  6. Bake for 20-25 minutes, until the topping is golden and the filling is bubbling at the edges. Rest for 5 minutes before serving.
