Soft Boiled Egg Buddha Bowl with Avocado

- 2 soft-boiled eggs
- 90g brown rice (dry weight)
- ½ avocado
- 2 generous handfuls mixed leaves (about 70g)
- 7 cherry tomatoes

Method
- Cook the rice according to its packet instructions, then drain if needed.
- Slice avocado and cherry tomatoes and set aside. Bring a small pan of water to a gentle simmer.
- Lower whole eggs into the water and simmer for 5-6 minutes, until the white is set but the yolk stays runny, then cool briefly under cold water and peel.
- Arrange the rice, avocado, cherry tomatoes and mixed leaves in a bowl, then top with the eggs and tahini dressing.
Lean Turkey Mince Stuffed Peppers

- 225g lean turkey mince
- 5 mixed peppers
- 90g cooked brown rice
- ½ of a standard tin of tomatoes
- 1 onion
- 2 garlic cloves
Method
- Heat the oven to 200°C (180°C fan). Halve the mixed peppers lengthways, remove the seeds and core, and arrange cut-side up in an ovenproof dish.
- Cook the lean turkey mince with onion and garlic in a non-stick pan over medium heat, breaking it up, until browned.
- Stir in cooked brown rice and tomatoes and season to taste.
- Spoon the filling into the pepper halves and bake for 25-30 minutes, until the peppers are tender.
Mini Protein Overnight Oats
Made with rolled oats, skyr, semi-skimmed milk.

- 40g rolled oats
- 100g skyr
- 100ml semi-skimmed milk
- 1 banana

Method
- Stir rolled oats and semi-skimmed milk together in a lidded jar or container.
- Stir well, cover and chill for at least 4 hours or overnight.

Prawn Cocktail in Lettuce Cups
